Learn how to prepare gourmet dishes while tucking into a five-course food and wine pairing

If you’re in the mood for some delectable food, complemented by a healthy dose of Brit wit and wine, then the One Ingredient interactive dining experience should be just the ticket. Started by English chef Matt Manning in 2013, the elaborate dinners combine a top-notch dining experience with hands-on cooking tutorials. That’s right – in between sampling Matt’s sensational concoctions, you’ll also get to try your hand at creating a few dishes yourself under the chef’s watchful eye.

The exclusive dinners have become famed affairs on the Cape Town foodie scene, especially as each month Matt picks a new seasonal ingredient to focus on. All the courses incorporate this one component (do you understand the name of the event now?) in a clever and creative way, and are paired with lush vinos specially selected by the partnering wine estate(s) of the month.

The dinners are hosted in the suave setting of Observatory, at the 7th Floor venue, which is an intimate space that is perfect for date night and interacting with fellow food fanatics. The next dinners are scheduled for Friday, 9, Saturday, 10, Friday, 23 and Saturday, 24 October 2015. Matt’s chosen a fresh, often underestimated seasonal ingredient to celebrate spring – the almond! Jordan Wines will be catering for the 9th and 10th of October dinners, while MAN Family Wines with present their prestigious Tormentoso range on the 23rd and 24th of October. 

Matt has worked with the likes of Gordon Ramsay and Marcus Wareing, amongst others, and has put in time behind the stove at Cape Town’s own prestigious La Colombe. The ultimate goal of his dinner series is to highlight the versatility of a single ingredient through demonstrating how it can be used across a number of courses.


At One Ingredient, guests are afforded the opportunity to see a master chef at work as well as to try to recreate his dishes. What’s more, each course is perfectly matched with exclusive vinos from top-notch producers, and the winemaker will be present on the night to guide the food and wine pairing.

On arrival, attendees can enjoy welcome drinks and canapés as the first course is prepared.

From there, foodies are called up to witness Matt create the starter in the kitchen before heading to their own cooking stations as they attempt to recreate the dish. Next, students move back to the table to tuck into their handiwork.

The same process applies to the main course’s dish, and after polishing off the entrée, guests can relax and remain seated as they are served dessert.

Pan roasted angel fish, chard tender stem broccoli, almond and coriander pesto, broccoli and bacon puree, bacon lardons and mussel velouté


Grass fed beef, heritage tomatoes, almond agar, wild watercress, asparagus spears, beef cheek beignet and beef jus


Bakewell pudding, roasted peaches, almond ice cream

Dinner costs R650p/p and includes a five-course dinner and wines as well as complimentary welcome drinks and canapés.

Space is limited to only 20 places per event and booking is essential.
