- Smoked Salmon Mille Feuille: Smoked Salmon, Mizuna, Lemon Aioli and Crispy Pastry layered together with Classic Cocktail Sauce and bordered by Balsamic Treacle

- Fresh West Coast Oysters: 6 Large Oysters served on Crushed Ice with Pickled Chilli and Onion Salsa, Tabasco Sauce, Fresh Lemon Wedges and Black Pepper

- Buffalo Mozzarella Salad: with Ripe Plum Tomatoes, Fresh Basil Leaves, Baby Herb Leaves and Coriander Pesto
Sorbet:
- Fynbos Sorbet: wild Mint, Lemon and Fynbos Honey Sorbet in a Chinese Spoon
