• West Coast Crayfish Pancakes - With young pea shoots and a carrot and ginger emulsion
• Braised Duck Leg “Tagine” - With preserved lemon and fragrant cous cous
• Lemon Sabyon and Pine Nut Tart - With honeyed mascarpone cream
• Coffee, Truffles and Jellies

• Braised Artichoke -Stuffed with its own filling and served with a Barigoule vinaigrette
• Spinach Linguini - On a bed of wild mushrooms with a chive crème fraiche
