Starters:
1682 Steenberg Brut and Canapés

• Norwegian Salmon Tartare: with eggs Mimosa, capers, Spanish onions and crème fraiche

or

• Timbale of Asparagus and Goats Cheese: served with a Rosa tomato tart, aubergine lasagna and basil ice cream

or

• Confit of Quail: served with a beetroot fondant, smoked pork belly, frisee salad and an aged balsamic flavoured quail jus

Main Course of the Christmas Dinner:

• Roasted Veal Cutlet: set in a cassoulet of summer beans, with plum tomato risotto and gremalata

or

• Crayfish, scallop and mussel “one pot”: with herb linguini, baby summer vegetables and a creamy mussel and scallop broth

or

• Asian Style Vegetarian Menu:Thai green vegetable curry, pan fried tofu with hoisin sauce, bok choi and bean sprouts, mango spring rolls with a sweet chili sauce and spinach dim sum

Dessert at Catharina's:

• Mango Infused Yoghurt Panna Cotta: with fresh Asian fruits

or

• White Chocolate Fondue: with lemon, gin and summer fruit skewers

• Frozen Summer Berry Soufflé: served with a summer berry terrine
