The original Irish Coffee

The story behind the Irish Coffee recipe encompasses Ireland's renowned hospitality

Many people believe the first Irish coffee was invented in San Francisco, but it was actually invented in Ireland in the early 1940s by chef/bartender, Joe Sheridan. Who created a drink to soothe the cold and weary American travellers disembarking from 18-hour flights off of what was known as the 'Flying Boat' (airship).

He knew it had to be warm and soothing, yet also sophisticated enough to be pleasing to international travellers. The passengers raved about the drink and when asked if this was Brazilian coffee, the chef replied that no, it was an Irish Coffee.

The name stuck and the reputation of the warming concoction rose on the fame of the airport’s notable passengers, among them Bing Crosby, Fred Astaire, Maureen O’Hara, Eleanor Roosevelt, Humphrey Bogart, Ernest Hemingway and Douglas Fairbanks Jr.

Chef Sheridan's original Irish Coffee recipe

Heat up a stemmed whiskey goblet, then pour in one shot of Irish whiskey. Drop in three white sugar cubes. Fill the goblet with strong black coffee (stop about an inch from the rim). Stir gently. Lastly, pour cream over the back of a spoon floating it on top of the coffee.

Remember not to stir, as the full flavour is achieved by sipping this drink through the cream.

‘Slainte’ (Irish toast)

Tip: Grate a pinch of nutmeg over the top, for an added dimension of flavour.
