Executive chef Greg Baverstock remembers fondly how he and his dad used to cook together in the family kitchen. This is where his love for food began. For this special day, Greg has devised this hearty menu with his father in mind.
For starters, try the Roast red pepper and mussel soup - served with smoked paprika cream, then as a main, Braised oxtail 'Potjie' – served with thyme mash and onion fritters…both will be a great hit.
Father’s Day Menu:
Starters:
Roast red pepper and mussel soup with smoked paprika cream OR Beef and springbok carpaccio with marinated shitake mushrooms, honey-soy dressing and mustard froth OR Braised lamb and parsley terrine with smoked aubergine puree and date chutney.
Mains:
Seared Norwegian salmon with creamed spinach, sweetcorn ravioli, port jus and thyme foam OR Chicken breast filled with goat's cheese on ratatouille, sauté potatoes and basil cream sauce OR Braised oxtail 'potjie' with thyme mash and onion fritters.
Desserts:
Creme brulee with pistachio biscotti OR Warm chocolate fondant with lindt chocolate sauce, hazelnut ice cream and almond truffles OR South African cheese board with onion-cucumber pickle, port-grape jam and crackers.
