- West Coast Crayfish Pancakes - With young pea shoots and a carrot and ginger emulsion
- Braised Duck Leg “Tagine” - With preserved lemon and fragrant cous cous
- Lemon Sabyon and Pine Nut Tart - With honeyed mascarpone cream

- Braised Artichoke -Stuffed with its own filling and served with a Barigoule vinaigrette
