Black truffle soup with a croissant parmesan stick
“Transparence” of tomato jelly raviolle with marinated tuna, salmon caviar and avo, served with fromage blanc & rocket sorbet and mild aioli
Seared scallops with cracked pink peppercorns on cauliflower and basil brandade with sunflower sprouts and cress salad, finished with vintage soy sauce and lemon oil
Boozy drinking sorbet
Line fish roasted in a butter, cep and hazelnut crust, with green asparagus, fondant potato and prawns, finished with a cream of Morel mushroom with Vermouth
Ripe peach gratin with lemon verbena ice cream and almond Panna cotta and strawberry coulis
