Craig Paterson - executive chef at one waterfront restaurant - is Cape Town's culinary answer to Fred Astaire. Paterson likes to say that he approaches each dish as an opportunity to "tap dance on your palate". And we think the man has got moves.

Chef Paterson draws on the Cape's multicultural heritage as inspiration for the unique blend of Thai, Cape Malay, Western, Indian and African flavours that he serves up at onewaterfront restaurant. The result is an arresting mix of contemporary culinary tastes with a proud local flavour.  

The picturesque presentation of the dishes and the fresh fusion of cultures make for a riveting culinary taste-bud adventure.

A few recommended examples of Paterson's innovative mélange of east and west is: The pan-fried west coast crayfish medallions with a masala spiced scallop samoosa and gooseberry atchar; the Malay inspired chicken supreme on curried lentil salad with ginger sauce; and the ginger and soy marinated quail with a North African spicy tabouleh and sautéed pak choi salad.

The dessert menu includes old favourites like tiramisu and cheesecake. If you're feeling more adventurous, try the poached pears in red wine with creamy rice pudding and an almond tuille (It's a CapeTownMagazine.com favourite). Follow your dessert with a coffee and a selection of complimentary handmade chocolates from Greyton chocolate manufacturers, Von Geusau

Dine in style in the elegant and sophisticated dining room with its stately brown suede chairs, white linen tablecloths and art from local artists decorating the walls. Or if you're feeling laid-back, saunter outside and have lunch in the lush green conservatory overlooking the hotel's swimming pool, the Cape Town yacht marina and Signal Hill.
