Ever wanted to know what it’s like to sweat it out in a professional kitchen? To deal with a Ramsay-style head chef who’s hell bent on getting their main courses out on time? Well, starting on Friday, 4 August 2017, the Greenhouse Restaurant in Constantia is opening the doors to their kitchen for an experience like no other. Every weekend two lucky guests will don chef whites and head into culinary battle, under the watchful eye of some of the Greenhouse chefs.

You don’t need to be an aspiring chef, or even an avid foodie, to enjoy getting to know the ins and outs of a professional kitchen. Two of the chefs at the Greenhouse, Peter Tempelhoff and Ashley Moss, will shepherd you through your day. You can choose between either a half-day or a full-day of training, both of which will immerse you in the high-end service industry.

Due to the size of the kitchen, the organisers have elected to limit the event to two people per day on either Friday or Saturday. The Chef for a Day course runs from August to December, so if your desired date is booked there will be other opportunities to get an inside look into the world of fine dining service. How exciting?

PROGRAMMES FOR THE CHEF FOR A DAY EXPERIENCE AT THE GREENHOUSE

HALF DAY

The half day experience will cost R1,600p/p, and will run from 9am to 2:30pm. It includes a delicious four-course lunch, and gives you a unique look into the day time service of the award-winning restaurant. You’ll learn prep, foraging, and plating, so make sure you have a Berocca before you arrive; you’ll need that energy!

9am - 11:30am: Kitchen Prep and Basic Skills
11:30am - 12pm: Foraging Basics and Herb Identification
12pm - 12:30pm: Plating Canapes and Starters
12:30pm: Four-course Menu with Wine Pairing

FULL DAY

The full day experience will cost R2,400p/p and will allow you to see how a professional kitchen transitions between day and night service. Like the half day, you will also learn prep, plating and foraging. At the end of your day, you will enjoy a 12 course Greenhouse Experience, paired with exceptional wines. This course starts at 10am and ends at 10pm.

10am - 12pm: Kitchen Prep and Basic Skills
12pm - 2:30pm: Hands on Lunch Service
2:30pm - 3:30pm: Break - Light Meal
3:30pm - 4pm: Foraging Basics and Herb Identification
4pm - 5pm: Wine Pairing Basics and Tasting with Sommelier
5pm - 6pm: Dinner Set-Up
6pm - 7pm: Refresh and Change for Dinner (Hotel ‘Day Room”may be provided, depending on availability)
7pm - 10pm: 12 Course Greenhouse Experience Menu with Wine Pairing
