An Evening with American Chef Gerard Coughlin at Azure Restaurant

The Red Carnation Guest Chef Series continues this month with a touch of Florida in a seaside setting

The Azure Restaurant at the luxurious 12 Apostles Hotel & Spa is going international on Wednesday, 10 June as American Chef Gerard Coughlin seizes the kitchen. The event will be part of the Red Carnation Hotel Collection’s annual Guest Chef Series, causing much excitement as this is the first year that an international chef will be taking part.

Coughlin is the Executive Chef at The Chesterfield Palm Beach in Florida and will be delighting guests with an intercontinental mix of cuisines, ranging from classic American and English dishes to Oriental and internationally-inspired creations.

Guests can expect a delectable five-course meal from Chef Coughlin, who’ll kick the taste sensation journey off with a Caprese Salad pre-starter, consisting of burrata (an Italian cheese) with fresh basil pesto, tomatoes, rocket and aged balsamic reduction. The starter is Lobster Macaroni & Cheese, made from butter-poached lobster with tarragon and white truffle aioli.

Next, Chef Coughlin will prepare a Creole Seafood Gumbo consisting of jumbo shrimp, white fish, mussels and crab meat served with Creole tomato sauce and jasmine rice. Continuing on the tasty trip, a pan-seared filet mignon with seasonal vegetables, scallop potatoes and roasted shallot demi-glace will be expertly presented to your taste buds. Chef Coughlin will wrap up his experience with Carolina Peach Cobbler (a baked dessert) with vanilla bean ice cream.

If the incredible menu is not enough to entice you to book a table, there is also an awesome prize up for grabs. One fortunate diner will win two return business class tickets from Johannesburg to any Delta Airlines destination in the United States. Guests do not have to do anything special to enter, and the winner will be drawn at random and notified via email on Thursday, 17 June.

3)    THE CULINARY MASTER: Chef Gerard Coughlin has worked at some of Palm Beach’s best restaurants and is now the Executive Chef at The Chesterfield Palm Beach in Florida. He will be the first international chef to take part in the annual Red Carnation Hotel Collection’s Guest Chef Series, bringing some unique transnational charisma and flair to the meal.
