The versatile superfood and this red wine come together to make magic
1ON19, a food series presented by the ON19 restaurant, a contemporary fine-dining eatery in 5-star hotel The Westin, has certainly been one to watch. Since February, every one of its installments has consisted of a five-course meal that is based on a main single ingredient, called the One Ingredient, and paired with a type of wine from one grape, called the One Cultivar. Each part of the meal is designed to pair with an elegant wine from a select Western Cape wine farm. This time around, the stars of the show will be the ingredient Coriander and the cultivar Shiraz, appearing for the entertainment of your tastebuds on Thursday, 30 June 2017 at the gourmet restaurant.
ON19 is on a mission to create a phenomenon of culinary inventiveness through its focused cuisine series; 2016 saw them delivering astrology-themed events where menus were created according to the star signs of the diners. Given this, you can imagine that there is a lot of creativity involved! The master behind the featured dishes is On19’s Executive Chef Anerith Smythe, executing everything to perfection.
Every course of your meal will have been designed to pair beautifully with lovely vino from Western Cape wine farms, which have all been made with the same variety of grape, i.e. Chenin, Chardonnay, and in this case, Shiraz, a type of black wine grape. The idea is to showcase how various kinds of climate, topography and soil conditions, as well as cellaring and vinification affect the taste of wine. Guests, whether wine connoisseurs or not, will be able to appreciate the wine as the food is sure to bring out the full richness of each kind of Shiraz.
Notably, the restaurant refreshed its menu just last year with the help of a celebrity Chef and ambassador of The Westin, Siba Mtongana, to align its items with international food trends. The main objective, which took over how the new menu was curated, was eating well by consuming superfoods and fresh, clean produce. In line with this, the 1ON19 food series’ One Ingredient has been, like coriander, a superfood.
As well as being packed with nutrients that your body needs (its seeds are particularly goodness-dense), coriander (also known by the names cilantro and dhania) is a source of dietary fibre that aids digestion and is thought to balance your blood sugar. It is also an anti inflammatory (helpful for arthritis, which is one of the many issues inflammation causes), an antiseptic, and helps to lower bad levels of cholesterol- Mother Nature is pretty darn magical.
